So, I love both chicken and eggplant parmigiana, but both require breadcrumbs.
Yesterday, however, I found you can substitute blue corn meal, and it works deliciously!
1. Slice chicken breast into two thin flat pieces.
2. dunk in beaten egg.
3. "bread" with ground blue cornmeal. We used a rough ground, but for a more flour-like batter, use fine ground.
4. Pan-fry. we used a mix of coconut oil (healthy) and olive oil (for taste).
5. When a cut into the meat shows no pink, drain off the oil and return patties to pan. Layer in your favorite tomato sauce, slices of fresh mozzarella, and grated parmigian. Season as desired (e.g. basil, oregano, salt, pepper, garlic).
6. Steam together in pan until you can't stand waiting anymore.
7. Mangia!
