the tale of the grainy yogurt: a parable

A few months back I bought a yogurt machine.  This is a machine that basically keeps the heated milk at the 
right tempurature for it to become yogurt.  You boil the milk, add a bit of already made yogurt for starter, 
pour it into the little jars, and put it in the warming machine for about 8 hours until it sets.

I was following all the instructions and sometimes I got delicious, creamy yogurt.  But other times I got grainy,
crumbly stuff.  "Bleh," I said, "this is terrible yogurt.  It's not smooth and creamy at all. It's a failure."

Then last week my friend Susan, who was raised by her Italian grandmother, came to visit.  I made a batch of 
yogurt, as we both enjoy yogurt for breakfast, and hoped for the best.  Susan opened one of the jars after it 
had sat the requisite cooling off time in the refridgerator.

"Oh, how cool!" she said.  "You made ricotta cheese!"

I have a yogurt AND ricotta maker.  And the ricotta (now that I know it's ricotta) is DELICIOUS.  *g*
