So, it's like this. I won an essay contest at work: "Why I work with Veterans." And the prize is a $75 gift certificate to the canteen. So I wander over to the canteen to see what there is to see, and this breadmaking machine catches my eye -- you know, the ones where you put all the ingredients in, push a button, and four hours later: bread!
Well first I thought, maybe I should donate this to my residential treatment program, but when I broach it with the nurse in charge, she says, "oh no, there's no counter space, we don't need anything like that in the kitchen." So I think, for meeeeeeeee!
Which brings me to the quandary. For various by now extremely boring reasons, I can't partake of yeast, sugar, or wheat. Does anyone know any recipes (that would work in one of those machines) for a yeast free, wheat free (gluten free) low glycemic bread?
Enquiring minds want to know.
PS the essay will be submitted to the local newspaper as a letter to the editor for Veterans Day. I may post it here, after.
